Mage Tower challenge returned in patch 9.1.5 with Legion Timewalking being introduced for the first time. However, the challenge remains as hard as it used to be so buying Mage Tower boost is the easiest way of getting new re-worked rewards. Each Mage Tower challenge takes ~1 hour to complete. We can start mage tower boost for most classes within 30 minutes. Guardian druid challenge can be started immediately after you've placed the order and takes ~30 minutes to complete.
The Mage Tower appeared in the Legion expansion. It was a very difficult activity with great rewards for experienced and skilled players, which gathered keys to have access to the Mage Tower. With the Legion expansion ending, the Mage Tower, as well as its rewards, became unobtainable, but in Shadowlands Patch 9.1.5 it returned as part of Legion Timewalking.
Finally, in Shadowlands Patch 9.2, the Mage Tower will be accessible at any time, no longer tied to the Legion Timewalking event.
The Mage Tower challenge works the same way it used to work in Legion. There are 7 challenges grouped by character's roles and specs:

As you can there's a challenge for each character role: 1 Mage Tower tank challenge, 1 Mage Tower heal challenge and 5 different Mage Tower DPS challenges. Each challenge is not easy and tests your skill at playing certain spec. Buying Mage Tower boost was the easiest way of beating the challenge back in Legion and it remains so now!
Since every MT challenge can be completed by several specs you don't have to prepare 7 characters. The absolute minimum number of characters needed to complete all 7 challenges is 3 characters: that is, for example, Death Knight, Paladin and Hunter. In worst-case scenario you won't need to prepare more than 3 characters no matter what classes you've already got.
Besides Tier 20-themed transmog sets for each class, the Mage Tower can reward you with Mage-Bound Spelltome. You should check our Mage-Bound Spelltome boost if that mount is your precious dream!
If you are a Druid, you should check the unique Fel Werebear Form that is an additional reward for Druids testing their strength in the Mage Tower. In the days of the Legion expansion, the journey through the Mage Tower could gave you additional appearances of Artifacts Weapons, but now, unfortunately, there is no such possibility.
