Void Elf Demon Hunters are coming with the Midnight expansion, but you don’t have to wait for launch day to start the swap. The Pre-Patch gives you a clean head start: a few straightforward unlocks, a quick character-creation step, and you can have your new main sitting ready before Midnight even drops. If your goal is to reroll into the new race the moment the expansion goes live, you still have plenty of runway.
Demon Hunters have been part of WoW since Legion Expansion, and for years they’ve been locked to a very tight pairing: Night Elf on Alliance and Blood Elf on Horde. Midnight loosens that restriction. Void Elves (often called “Alliance Blood Elves” by players because of the shared silhouette and vibe) become a valid Demon Hunter option on the Alliance side, which means you can prepare the character early instead of scrambling at release.
You do not have to play a Void Elf to unlock the Void Elf Demon Hunter race-class combination. Any character (any race) can run the unlocking questline.
To start that questline, you first have to complete the In Search of Darkness storyline in K'aresh. This is a sidequest that starts with the quest A Common Cause which you pick up from Magister Umbric in K'aresh, and you might already have completed the full chain or parts of it previously.

Once you have completed this questline you should return to Dornogal, unless Magister Umbric has the quest The Pursuit Continues available.
The Void Elf Demon Hunter unlock chain kicks off in Dornogal with the quest “The Pursuit Continues”. You can pick it up from Magister Umbric — he’s upstairs near the Inn.
The entire questline is only three quests where you help Leona train to become a demon hunter in K'aresh. After you clear some trash and take down an elite, you’ll earn the Rage of the Ren'dorei achievement and unlock Void Elf Demon Hunter. Once you’ve unlocked Void Elf Demon Hunters, you can use the Winds of Mysterious Fortune to speed-level a fresh one as soon as the buff goes live on the 27th / 28th.
